This special evening will feature a collaborative seven-course menu from the minds of Grey Sweater’s Executive Chef / Owner Andrew Black, Chef de Cuisine Tim Ward, and Guest Chef Matt Vawter, recipient of the 2024 James Beard Award for Best Chef: Mountain.

Matt Vawter fell in love with cooking a young age, where his first exposure to the culinary arts occurred as an underclassman at Summit High School. Matt went on to find great success in the Denver restaurant scene at prestigious restaurants such as Fruition and Mercantile Dining & Provision, before returning home to Breckenridge to open his own concept. In December of 2020, he introduced RootStalk – an approachable, technique-focused, ingredient-driven dining experience to the local community. Rootstalk was designed to feel like coming home, evoking Vawter’s own nostalgic return to the place that he loves dearly.

Eighteen months after Rootstalk’s opening, Vawter and his partners opened Radicato in the heart of Breckenridge. Radicato celebrates the rich heritage of Italy and speaks to feeling deeply rooted in a place and the desire to embrace the energy there while also echoing Rootstalk’s commitment to intentionality and excellence on every level.

Join us for this one-night only event! The seven-course menu is available for $150 per person (non-inclusive of tax and gratuity) and a supplemental wine, cocktail or bottled water pairing may be added for an additional $100 per person.
